The political landscape is shifting, and the dark of winter is upon us. We are living in a world of paradoxes: Summery weather alongside early evening darkness. A flurry of fall activities set at a distance, across screens and masks. Hope for a better year ahead, tinged with doubt that anything could change.

Through all these shifts and emotions, food is a constant. Food has the power to help us find light and life! Stay with us, and deepen your love of whole plant foods, because we can move through this time together, feeling stronger than ever.

Besan laddoo - Diwali dish

Starting later this week, Diwali is the Indian festival of lights in which the custom is to light clay lamps that protect from spiritual darkness, feast with family, join in communal events, and give gifts.

Try this delicious and festive recipe for a no-bake besan laddoo, traditionally prepared with ghee and sugar:

  • 3/4 cup roasted chickpea flour
  • 1/4 cup mixed almond meal and cashew meal
  • 1/2 tsp cardamom powder
  • 1/2 cup dates, soaked in water, then blended into a paste

Mix all ingredients and knead into a soft dough. Shape into balls. Decorate with crushed or sliced nuts like pistachios or almonds. Chill in the fridge to harden.
